Ages ago there was a recipe in here for pastry using nuts, anyone got it or have a good recipe
As I’m going for my once a year mince pie and needs to be gluten free for daughter, ya

I use this recipe for quiche, I also eat gluten free. Might be worth experimenting to see if it’s any good for mince pies. I think my egg filling holds it together a bit.
Mix 170g ground almonds, 30g coconut flour, 1tsp each basil, thyme, mustard powder, you can also add seeds, salt pepper. Make a well in the centre add 1 large beaten egg, it will be a crumbly mix, melt 50g coconut oil in the microwave and add slowly. Add 3 tablespoons cold water until a dough forms. Chill in fridge for 30 mins before using.
