Every now and then you feel you need a bit of a boost, a mood-lifter, a special treat. For me, that role is going to be played by my new Favourite Thing - Peanut Butter Cookies.
@ewelina , congratulations, you are now my new BFF, ahead of the England Cricket Team, entirely because of your recipe.

I'm putting a link to the page so others can try them out. I would be interested to know about successes or failures. I had no soya flour so substituted gram flour. I don't think the overall carb tally will be adversely affected.

Glad you like my recipe :) Peanut butter is one of my favourite low carb treats.
Gram flour is higher in carbs than soya flour but much tastier :) if you dont use too much definitely worth adding

@nomoredonuts I have made these twice, once with Whole Earth Crunchy Peanut Butter (with salt), and once with Meridian Crunchy Peanut Butter (no added sugar or salt). The Whole Earth ones were much better. Only problem is trying not to eat them all. Which reminds me, I must make another batch this week.

Modesty (and shame) prohibits me from saying how many are left from today's batch.
