This is not a diabetic recipe but just putting it out there. When my eldest daughter was younger at the play school they made peppermint creams simply by using a tiny piece of boiled potato and pressing icing sugar into it with a wooden spoon. It was a real small piece of potatoes and loads of icing sugar. Somehow it came to the consistency of peppermint cream and pressed to peppermint cream discs, of course adding the essence flavouring. The science of it was something to do with the starch in the potato. Can't remember much else it was about 12 years ago, but know they were very much like the real thing.
