Pickled eggs

I like to keep something in the fridge just to snack on

I tried reusing the liquid in a gerkin jar which was kind of ok

This is my first attempt at a recipe

The hardest part I reckon is waiting the two weeks till they become pickled

The juice is cider vinegar chili flakes salt and a dash of monk fruit , as a substitute for sugar
 
Tried 'salted eggs' ? - eggs in their shells, packed in a salt clay mud. But they can be cooked at home in brine also.
They are often available from Asian food stores although there are recipe instructions on-line, They are sometimes coloured to differentiate them from standard eggs.

Never tried them. If I spot them when I’m out and about I’ll get some.
 
Hi there everyone,
Long time since I posted , as have a lot of stuff going on , I can’t find the recipe for pickled eggs maybe some one could post ? I love hard boiled eggs.

What I was going to ask is about diet, since being diagnosed with type 2 diabetes I think I’ve got my numbers down to aceptable , but don’t take a sample very often which I know is wrong , but I’ve recently been diagnosed with with heart failure ( at 85 living alone bit of a shock)

I now realise that’s it doesn’t always mean your heart completely failing but part not working , trying to get into a heart failure clinic, but long wait .

Sorry to ramble on my question is Im trying to stick to the keto diet as that seems to help the diabetes and diverticulitis, but now with this latest problem wondering what I should be eating ?
Anyone any advice please.
