Popcorn

In my quest to find something reasonably healthy to snack on instead crisps I tried popcorn. Unfortunately the only pack that was left was sweet (I would usually avoid this) but I bought it and prepared it at home.

I ate the lot! It was so good and about 2 hours later, I did a bg test. 5.7-not what I was expecting! I keep reading all these articles saying avoid popcorn at all costs if you are a diabetic, why?

Corn has LOTS of carbohdrate in it. Carbohydrate has a negative effect on BG.

If you've been identified as Diabetic, you should limit your intake of carbs. I see you had a good BG reading after the popcorn - but that is not to say that that will always be the case. It means your pancreas has to work overtime to process the carbs you have just ate. In the future, your pancreas might not work as efficiently as it does now. It might just wear out.

Don't make your pancreas over work - try to keep it in good health by NOT making it work so hard...

I eat salted popcorn. Not much though, only as much as I can fit, comfortably and not dropping any, in the palm of my hand. I've found it doesn't raise my BM, it satisfies a craving, and it keeps me 'regular'. That's the only thing I've noticed after cutting out starchy carbs - constipation. But it just shows what they were doing to my body - chronic diarrhoea. Obviously this is a far better eating plan, and to be honest I don't miss bread - except when my daughter makes toast!!

I wonder what the reading would have been at 3 and 4 hours later. :?

My diabetes clinic counsellor explained that corn is something to avoid - whether popcorn, tinned sweetcorn or corn on the cob. It falls into the higher carb categories like bread and pasta, it is in the grains/wheat category rather than the vegetables. So I avoid popcorn as much as possible (I can't help scooping up a few kernels if my sons want to make popcorn on rare occasions)
