Whatever you ate to cause that spike had far too many carbs for you to process.
Someone who has no problem dealing with carbs will usually see their blood sugar return to pre meal level within 2hrs.
So that is what we aim for, we give ourselves a 2mmol limit, in other words if our blood sugar is within 2mmol of our pre meal level, then that meal was OK.
If we are more than 2mmol above at 2hrs then there were too many carbs for our bodies to handle.
To be blunt, you won't be pre diabetic for long if that's a typical meal, you will soon progress to full T2.
