Question about carbs in yoghurt

I am very partial to Greek yoghurt ( 4.5g carbs per 100 grams). In moderation it does not spike my levels. Sometimes it is not available in the city where I spend a few months of the year. The only options are very sweet and I can't tolerate them. Has anyone used the ( non electric) yoghurt premix powder? The packet says carbs ( sugar) is 7.7 per hundred grams....however for a "more acidic taste" leave the blend to mature longer. Would "leaving it" mean that the active bacteria are consuming the sugar and consequently making it a lower carb result? I doubt that I could eat much if the final result is still 7.7. Any ideas? Thanks

These cultures metabolize most of the lactose, thus transforming it into lactic acid, and only the small about of left over lactose is counted as a carb.'
