I have posted this elsewhere, but it's good

I dreamed up this very low carb recipe. Preparation time for an experienced cook is almost exactly half an hour. [I grate my own cheese and chop my own cauliflower! It's quicker if you get pre prepared stuff, but not so good]
Ingredients
none of these quantities matters much it's quite flexible
makes 4 generous portions

1/2 cauliflower, steamed/boiled in florets
1 onion, finely chopped and lightly fried [sauteed]
100g [4oz.] grated cheese [cheddar is ideal]
4 medium eggs,
150ml 2/3 cup of double [heavy] cream
pinch salt

Method
beat eggs cream and salt together

20cm 8 inch baking pan about 4cm [2 inches] deep [I use a silicone one!]
Put sauteed onion evenly on bottom of baking pan, follow with cauliflower, breaking the florets up a bit, then sprinkle on the cheese. Lastly pour the egg/cream mix over evenly.
Bake in the oven for about 40 minutes at 160 degrees Celsius [320 Fahrenheit] check the "custard" is cooked, by sticking a skewer or knife in. increase time as necessary
From the silicone pan, this will tip out easily.
serve hot or cold. With green veggies or salad
this is good for breakfast if there are any leftovers
Would be good for picnics or journeys too

Hana, sounds delicious. It's on my shopping list for today. (Tried cauliflower cheese the other day and forgot to put in the egg yolk with the cream and cheese but it still tasted good.) Thank you for posting 'quiche' recipe.

Hi Hana - that's a good recipe which I'm going to try. I have a variation of this, which is almost the same except that I use a large grated courgette instead of cauliflower. Everything else, including the cooking temp and time , remains the same.
