Have settled for the fact I can have pasta,rice,pots in small amounts. No bread.

Yesterday shared a salmon and broccoli quiche with hubby, I had about a third of it with salad.

2 hours later 6.4 :D

Note to self - don't forget to still try new foods and test to see if in or out to the next round

Quiche - you're in!

I haven't tried quiche, I have avoided avoided anything with flour. I will have to make one with very thin pastry and try it. Have you tried Burgen bread? Its lower carb than others and digested slowly so doesn't spike me if I have 1 slice with meat/cheese and salad. Bread has been the biggest problem for me as I nearly always think 'sandwich' at lunch time!

Glad you got a good result Mary, but be careful of thinking a food is ok on the results of one test. You might have been a bit low BEFORE the test, the test could have been innacurate (a bad one) or you may have just been "lucky" (we react differently on different occasions). Undoubtedly the spinach and cheese would help to slow the release of sugar down, as spinach is low GI and the fat in cheese slows the process of sugar conversion, but the flour in the quiche is not great normally and you could be high another time.
 
And of course, the main ingredient - eggs, are high in protein, so they will help slow down the carbs.

If it works for you then that's great MaryJ. :)

Just thought, MaryJ, if you have a look on the 'Low carb' recipe thread, there will be low carb recipes for pastry using almond and coconut flour.

thanks for the replies,

burgen - have tried and no good unfortunately. I was a complete bread monster before and I do wonder if i 'poisoned' my body, it seems weird that i can tollerate lots of other carbs ( in small amounts) but not 1 piece of bread. Is it possible? Has anyone else found the ONE thing they loved is the ONE thing they can't now have?

Grazer - see your point, will be sure to test again if I have it. To be honest I'm still a bit obsessive about testing and recording food and reads so will pick up quickly if it was an anomoly.

Shortcrust pastry can be up to 50% fat by weight, which will slow the carb absorption.
then the portion size is important.
I can eat anything if the portion is small enough. However if my bg is over6, I assume I've eaten too much.

I eat quiche without the crust- it's still delicious that way.
