Brill idea. I like the sound of the crustless quiche. XMake a nice filling omelet/frittata/crustless quiche beforehand with lots of veggies, meat, cheese, whatever you like, and take cold slices of it with you instead of sandwiches.
Can be eaten just as easy as a sandwich if you make a firm omelette.
Yes I did think about the ham but I’m not a lover of cheese unless on pizza lol. XI'd do ham and cheese wrapped round each other to make a "sandwich".
Maybe some low carb nuts (if you have an "off switch" where nuts are concerned).

They sound delicious. X.These Keto scone style buns taste good, are easy to make and I fill them with my usual sandwich fillings. especially nice with Philadelphia and tomato. I double up on the recipe make them a bit bigger and freeze half.
Don’t be put off by them being called biscuits, it’s an American term for scone.

You can get Livlife from Waitrose or some branches of Co-op (assuming you're in the UK?). It only has 3.4g of carbs per slice, and gives me great blood glucose readings.
