Quick lunch?

I was really panicked by low carb lunch - I had breakfast down fine and dinner but lunch without bread felt impossible. However, we adapt! I chargrill a big batch of veggies - peppers, asparagus, courgettes - and keep them in the fridge where they last 3-4 days. I find them so much more enjoyable than raw veggies. I smear them with cream cheese and have sliced ham, or smoked salmon, or egg mayonnaise, or tuna mayo, and a handful of peanuts or some cheese. I also have a few Carrs Table Water crackers sometimes. The key for me is to have a variety of things so I don't get bored and sulky!
