Quick, One Pan Supper.

Tonight was a 'finish up the food that needs eating first' night.

In a frying pan with a good knob of dripping, bung in green veg. I had a spring onion, a leek, half a courgette and a handful of french beans which I sweated down a bit with some garlic. When softer, pour on some hot water to barely cover, add a small squirt of tomato puree and salt and pepper to taste.
Let this cook down to just cover the bottom of the pan. To this I added a good dollop of mascapone and the bit of that spreadable cheese in a tub, of which there was about a tablespoon left. Let this melt and bubble into a sauce and grate the bit of dry/moldy cheddar you forgot about and let it melt through.
I also added two slices of ham, the edges of which had gone crispy so I cut them off and chopped it up.

That sounds deeeeeeeeeeeeeeeeeeeeelicious Libby. Quite often the concoctions made from the last bits, are nicer than regular meals. :lol:
 
Like bubble n squeak without the erm do the spuds squeak or the other stuff...
 
No, not a bit like Bubble & Squeak, more like the sort of thing served with pasta.

I still have Bubble though, but with turnip/swede

...and now I'm going to have to cook some greens and a bit of turnip for tomorrows dinner. I've got some lovely cold cuts to go with that.

I must say MW made your chicken and leek soup the other day and now I want to have your babies. It is a thing of awe and beauty. :thumbup:

That soup is bl**dy wonderful though, innit. Who'da thought two ingredients would be sooooooo wonderful.
