I tested blood levels after eating a small pear around 6 months ago and found it spiked quite badly ( 3.0 rise average from 6 tests) . Tried again starting on monday and no spikes at all in 5 of my 6 tests and the 1 that did was only up .5.

does this mean we need to constantly test as our bodies reactions change over time so that no food results are set in stone?

Absolutely.

I have a concern that one day i will get blasé about testing, not bother, and coast along, head in sand while things deteriorate without me noticing...

But congratulations on going the other way! Well done! :)
Have you dramatically changed your diet? Or lost weight?
I remember a conversation about coffeemate. Did you give that up? And did it help?

I did Brunneria for 6 months but then reintroduced it as I was then trying to halt weight loss and found it didnt spike me

Brilliant.
I'm wondering if you have lost enough weight to dip below your personal fat threshold - effectively reversing your type 2.

That would be wonderful.

:D
