I've been trying to buy food with green for fats and sugars but it's all so confusing need to go back to the drawing board it's all confusing saturated fats non saturated fats I'm so totally confused with it all it's all getting me down

I tend to just check the carbs these days. And stay away from high;y processed food.
For a T2 total carbs (minus the fibre in the USA) is my best indicator. And I eat as much in the way of healthy fats as I want to.
Lots of recent research will hopefully trickle down to gov, the HNS, the Eatwell plate, etc and overturn the push they made to reduce fats which led to a huge increase in various sugars being added to meals.

It's easiest to keep it simple, just unaltered single word foods, no packet reading required
Meat - chicken, pork, beef, lamb, offal. Cook, grill or fry in butter or olive oil
Fish, including prawns crab mussels. No batter or coating, just grill or fry in butter
Eggs, scrambled, booked, fried, omelette
Cheeses and dairy, 10% fat or more Greek style yoghurt
Nuts, not roasted or flavoured , and no more than covers the palm of your hand
Salad and any green vegetables- cabbage, broccoli, celery, caulifower. Just keep tomatoes and peppers low in quantity. Avoid sweetcorn, carrots, potatoes, parsnips

To add flavour or variation use herbs, spices, garlic, cream, butter.
Olives

For something sweeter try very dark chocolate, just a little.
Or add chopped nuts or a small handful of raspberries to plain greek yoghurt.
