Readings control with small snacks in between lunch and dinner

I have noticed that my glucose readings after dinner are higher than they are after lunch. However on days when I have had a small snack in between lunch/dinner the after dinner numbers are lower. What exactly is the reason? I am on 1500 mg of Metformin.

My breakfast is late in the morning one boiled egg and tea without sugar, lunch is a small bowl of brown rice with chicken/vegetables, green salad and dinner one home made Asian Roti with curry.
 
My guess would be the flour in the roti is causing more of a spike than the rice. That's why the reading are higher after dinner?
Maybe try swapping the meals around and see if this changes your reaction to them?
What would the snack be? It may cause more insulin production hence your body is "primed" for the post dinner spike.
Personally I'd be eating more of the lunch and dinner without the rice or roti.
