Recipe for gridded tomatoes with Parmesan on toast breakfast

Olive oil, brushing
1vine-rip tomato, thickly sliced
1 tsp balsamic vinegar
1slice wholemeal soda bread.
Parmesan shavings for sprinkling
Salt and pepper.

1.brush griddle or frying pan with oil and heat. Add the tomatoes and cook for about 2 minutes, turn once.Add the balsamic vinegar and heat briefly.
2meanwhile, lightly toast bread and place the tomatoes on top. Pour over any juices left in pan. Season and sprinkle with Parmesan.
1g carbohydrate

I love tomatoes on toast although only as a treat these days as I don't eat carbs

I love tomatoes actually :D
So will give this recipe a try next week .
It's right up my street as a lunchtime meal for me :thumbup:
Will do it with Burgen Bread though - just 'one' slice is suffice for me .
With a cup of weight watchers tomato soup to accomany it .
Quick n easy to rustle up too - perfect :clap:

Will also try it with burgen bread bought it yesterday its better for me

Sounds delicious with burgen. I would be tempted to try it with goats cheese.

reverse the stoneground wholeflour and all purpose flour quantities to make it lower GI but leave it longer to prove.

Use this bread as a bruschetta adding anything you want from things like sliced red onion, spanish onion, thinly sliced pecorino cheese, olives, tomatoes, anchovies etc etc.

The bread keeps 4 days too!
