Need a recipe for low carb cheese sauce please to use on my cauliflower.
read one ages ago but did not save.

Hiya timps, :)

I use creme fresh heated up add grated cheese and melt - don't boil it once the cheese is added as it will curdle - nice with a touch of mustard or grated nutmeg or anything else you like to add - enjoy :)
 
I've used just cream and cheese, and a dash of black pepper...

I've used soft continental cheese from Lidl (the supermarket - not the country!) and it was awesome. Can't remember the name of the cheese (St. something? orange wrapper in a triangle shape), but it melts into a lovely sauce...
 
On "How to Cook Like Heston" he did a cheese sauce. From memory, it was wine (which he reduced) some stock and then just grated cheese, melted into the hot stock/wine. He took the pan off the heat to stir in the cheese (I think) and he said not to over stir it.

He tossed the cheese in cornflower but claimed it was to give the sauce a glossy shine ... I can live without the shine.

I haven't tried it out yet, but I'm hoping it might be nice for posh nosh.

Both receipes sound great, I love cauliflower cheese :D Could the cheese possibily be St Agur :?: RRB

Re: the Heston sauce - I remember that. I'll definitely be trying it. Be lovely with some Cauli and bacon bits!
