Reheating Risotto?

Hi,

I want to make a risotto for lunch at work, and was wondering how do you reheat it in the microwave...safely?
 
I believe that rice is one of the worst for giving people food poisoning. Have you seen the rice pouches you can buy. Expensive for every day I guess but they do some lovely flavours and some risotto ones too. I used to have some occassionally before diagnosis. I haven't touched rice in about 18 months, it spikes me too much. For lunch I take in pots of homemade soup that I microwave, make a batch at the weekend and it lasts me all week and some in the freezer.
 
So far I have not suffered from whatever it is that you get from re-heated rice I am happy to say. One technique I use for re-heating anything is to use the defrost setting but for longer. It takes practice.

I make curry in batches and if I wish to eat a curry I put the frozen one in a microwave and defrost it for 25 mins and it comes out fine and hot but I should point out that I cook the rice separately by the famous Ken Hom method. (1 measure of rice, 1.5 measures of water. Simmer for 10 mins and let stand for 10 minutes)

So far, yesterdays Chinese Chippy food re-heated and enjoyed has not killed me off. There is still time.
 
Reheating plain boiled rice from chilled is not recommended (although IMHO if you refresh it right after boiling and drain it well chill straight away and reheat straight from the fridge it should be fine - I do this)

BUT risotto is a whole different ball game, I wouldn't do it, even if you put in a fridge as soon as you get to work it has still probably risen in temp enough to cause problems, then there is the extra ingredients you have added and the moisture that comes with a risotto, all nice environment for those nasties ewwww I wouldn't take the risk personally

I would say if you used a cool bag whilst travelling to work and put it straight into a fridge when you get there it would be fine, having said that if any doubts about the temp it has been kept at then it's probably not worth bothering with.

My sugar levels are pretty good most of the time now! As I am on the pump! As long as I measure out what I am having properly then I am usually okay :)
 
That's great ! I used to love risotto with crusty bread....sigh...

I've been reheating rice in all forms in the micro for years, and am still here to tell the tale! Bugs only thrive in badly stored food, ie if it gets too warm, so don't leave it on the work surface. As long as you chill it quickly, refrigerate it overnight and keep it cold whilst taking it to work you shouldn't have a problem. It may be a little too thick so add a bit of water to loosen it up a bit before you reheat.......enjoy! I no longer eat rice :bag:

Ahhh! Well I cooked my rice Tuesday night put it straight into the fridge and then walked to work and well its pretty cold out and then straight into the fridge at work but I didnt reheat it because I was too scared so it was a bit hard :/ ha!
 
I'm diet controlled type 2. I'm sure just typing it made my blood sugar rise
 
I can imagine cold hard rice can be pretty awful! Lol, Nicola, you could save yourself a lot of hassle if you googled for info. There's a whole world of knowledge there ;)
 
It was but it wasnt as hard as I thought lol and yeah I know I did google but there was mix reviews and I'm just a major worrier aahaha!
 
I'm not recommending it, but I've reheated rice in every form for decades. Home cooked, plain, egg fried, risottos, iindian, Chinese, left on the plate rice from lunch in the evenings, you name it. I can't honestly remember any bad effects.
But that's just me.
