Resistance carbs

Hello, I have come across youtube videos and sites claiming that if some foods like potatoes/sweet potatoes, legumes, rice, pasta and oats are kept in the refrigerator for 12-24 hours, their content changes. Part of their carbs turns into resistance carbs that functions as fibers and doesn't raise BG as much. Reportedly, bread should be also kept in the freezer and then toasted for same results. Is there any substance to such claims, or is it a hack?

It seems to make a difference for some, not for others.
For myself, I need the same amount of insulin before and after refrigerating or freezing so no difference for me.
