Ripe Avocado

How can one preserve ripe avocado for next one or two days before consumption?
 
I keep mine in the fridge and take it out half an hour or so before eating to bring it up to room temperature.
 
As soon as it has a little give from tip to tip and in the fatty part put them in the fridge. It stops the ripening
 
I’ve just ordered a couple of “avocado huggers” - silicone covers for half an avo in the fridge. I’ve been getting through a fair bit of cling film covering a half in the fridge - I know silicone is more plastic (I’m trying to cut down), but if they last me a few years it should pay off.
 
If I get one too ripe that I’m not ready to use, I revert to mashing it with lemon juice, salt/pepper, maybe sour cream. Make a spreadable or dip! Lasts well in the fridge. Delicious.
 
They say if you leave the stone in it does not go off so quickly. I have a little avocado container...bought in Aldi some time ago... that when I have large avocados I put half in with the stone then put it in the fridge it does keep it fresh enough to eat the next day
I mostly buy the ripen at home small avocados from Aldi and just the right size to eat it in one go so no bother about saving half. I did buy some bargain ones the other day from a fruit stall large ones 5 for a £1 so do have to save half of those

If I’m just having a half, I leave the stone in the half that’s going in the fridge, it does seem to keep better. I often rub a bit of lemon juice on the cut side to stop it browning.
 
I often have several ripe at the same time so I mash them up with chopped garlic and basil leaves, and mix with a dash of lime juice and olive oil. This goes into portion sized containers, is "sealed" with more oil and topped with grated parmesan and a few pine nuts or chopped pistachios, then gets popped into the freezer. They also keep well in the fridge for a few days, just make sure there's no air gaps to avoid the avocado getting brown round the edges..
