A quick low carb replacement for toast at breakfast is plain Greek yoghurt with some berries and walnuts. Or look at a website for keto hana they do good low carb granolas which are nice with Greek yoghurt.
lunches I often make Chaffles instead of bread. Recipe here https://www.ketotwins.com/recipes/the-best-chaffles I stretch it to make 4 so they last two days. Can be recrisped in a toaster the second day. My preference is to use cheddar. Very quick to make if you buy grated cheese. Lovely with soft cheese and bacon on top after cooking, or with onion chopped into the mix.
for evening meals I cook the main meal then add carbs for hubby, and substitute with veg or salad for me. So yesterday we had salmon with asparagus and tomato cooked in the air fryer, hubby had new potatoes, I had half an avocado. If we have chilli or spag Bol he has rice/pasta I have cauliflower. For cottage pie I top my half with mashed swede. If I doa roast I load my plate with veg and one small roast potato.
I use neutrcheck to record and calculate carbs and try to stick to less than 25g per meal, two meals a day which is working for me. It’s all trial and error to start with.
