I am newly diagnosed type 2 diabetes (3 months) and am on Metformin 1000 mg x 2 daily. This morning I discovered I only have 1 tablet left. Will I be ok just taking the 1 today and first thing tomorrow go to the chemist and ask them to issue me an urgent supply while my new prescription is being processed. Or should I contact an emergency doctor. The reason I ask is that I don't know how my body will respond if I miss a couple of tablets.

Metformin works by building up in your system, rather than any massive impact, per dose, so missing a couple of doses isn't likely to cause any issues.

For the future, it could be worthwhile setting yourself a reminder for when you need to think about a repeat prescription.
