Salad dressings

soaps on telly and people talking about the characters as if they were real.
Like so many low carbers, I eat LOADS of salads. I don't however like bought salad dressing. I make a simple vinaigrette and add some herbs or other flavours to the different salads to change them a bit
Basic vinaigrette recipe;
Into a jug put a teaspoonful of sweetener, half a teaspoon ful of salt, a grind or two of fresh pepper. Add about a quarter cup each of lemon juice and white wine vinegar. [aall quantites variable]
the add a teaspoon dry mustard . mix ingredients thoroughly. then add a cup of good oil [I prefer not to use olive oil, because it has a strong flavour, but that's personal choice]
Whisk the vinaigrette until it combines thoroughly.
Keep in a jar in the fridge.
For a tomato salad sprinkle salad with basil and oregano, then add viaigrette and toss. For a mixed salad try finely chopped chives or spring onions.
Whatever you like is perfect. this is not about carefully measured ingredients. If the vinaigrette has a "too strong " taste, just add a little water. You can add cream or creme fraiche too if you fancy.

Thankyou Hana, I've been wanting to try something other than mayo. I don't like the taste of Olive Oil, what other oil can I use?Groundnut?

I made the mayonnaise yesterday from the Divalicious website. Didn't use the quantity of oil she suggests but it turned out
very well. Not sure how long it will keep but having dug up some of our new potatoes I used quite a lot on a potato salad.
I obviously :lol: didn't eat much of it but what I had was delicious.
 
Can I ask why put sweetener in salad dressing I make one very similar but without the sweetener I find it better to try to train my taste buds not to expect sweet taste with every thing , then when I do have a sweet treat it doesnt need to be as sweet if you get my meaning
