Scandis recipes

Choc mug cake
Individual chocolate pudding

Recipe makes 2

50g butter, melted in the microwave
3tbsp ground almonds
1 1/5 tbsp sweetner
1/4 tsp vanilla
Pinch of salt
1 egg
1 tbsp cocoa powder
1/2 tsp baking powder
2 squares 70% dark flavoured with orange chocolate
Or
1 square 90% chocolate, chopped
2 tbsp pecans

Melt the butter in a bowl, add remaining ingredients and divide into 2 mugs and nuke for 1 minute per mug.

glad I could be of service!
Am in the process of perfecting a peanut cookie one. Too sweet so will be making them again with less sugar. When I'm done I'll post it!

With slmond flour ...don't want to sound demanding at all ........:singing:

Peanut cookies
1 cup no added sugar peanut butter
1/2 - 1/3 cup of sweetener
1 egg

Blend in food processor. Roll into 20 balls. Spread out on baking tray. Flatten.
10 mins on 175 degrees Celsius.
Try not to eat them all at once! ;)

150g Chopped nuts
150g coconut (+ 50g extra)
1/2 tsp vanilla essence
50 g 70% dark chocolate
2 tbsp double cream
1,5 tbsp coffee

Method
Melt the chocolate and mix with the coffee and cream.

Put 50g of coconut to one side.

Put the butter, nuts, coconut and vanilla essence in a food processor and mix. Now add the chocolate mix and mix.

Roll into balls and roll in the coconut.

Almond crackers!! Omg, you are a life saver. I love crackers and use them a lot for snacks, always hated that they were about 4 carb each one, wow, I've just seen your recipe and made these immediately, I threw in some Parmesan, just a little, and they were great!!!, thanks so much, will make these every week now:):) and under 1/2 carb each, amaze balls!! and thank you.
