Almased shakes (soya and probiotics, I think) didn't spike my blood glucose. Liked the flavour too.
But they are quite expensive.
If you want low carb, then Atkins shakes would do - but they are full of chemicals.
Green smoothies (see the link in my sig) can be made lower carb by watching the veg to fruit proportions and the carb content of the fruit.
Most of the commercially available shakes are mixed with milk or water - and have a finished carb content that may still be within your low carb limit, but my experience is that the carbs are very quickly absorbed, creating a rapid BG spike-and-drop - which was horrible. Other people get on fine with them.
If I ever went the LC meal replacement shake route, I would use either homemade green smoothies or Almased. The joy of green smoothies is that they are fresh, raw, full of phytonutrients, fibre and they are delicious! As well as being personally tailored for your preferences.
My personal blend never spikes my blood glucose, but does keep me out of ketosis, if I have them for two meals a day - it's all about choosing the right ingredients and testing to check the proportions and portion sizes work for YOU.
