Thanks. I did Google it but what I was looking for was recipes that people had already used and which they found worked well, to try and cut through all the noise.
I make very successful low carb bread using gluten free low carb flour and bread mixes from Panda Pantry a small UK online company. They also have recipes and support. You can't use a bread maker though with it because of the way this very low carb flour works but honestly it's a doddle to make no real kneading.

I've been low carb for nine years and always struggled with bread but not with this flour and method. They do offer sample bags if you wanted a try. Also worth noting you don't use much of the flour because of the way it expands with liquids. High fibre as well as low carb.
I use Haighs Bakery Low carb bread mix in my Panasonic. I buy 4 bags at a time, it's quite reasonable and each bag makes a large loaf. Very easy to use.
I tried for a little while making bread in a breadmaker, it was never successful on any program as the dough is too tender to take a second kneading. It rises well enough and then just goes flumph as all the rise is knocked out.
When I swapped to a stand mixer, handled the dough very carefully and either allowed it to stand overnight after a second light kneading or kneaded just once, the results were much better, but as the years passed I just stopped including bread in my diet.
There are 'chaffles' which work with beefburgers if made in a waffle iron or the same mix can be diluted with a little water and used to make wraps in a frying pan. I suppose they should be called chapes.
