So maybe rice can still be on the menu...?

Found this on MSM Food & Drink today:

In 2015, scientists in Sri Lanka found that cooking rice with a teaspoon of coconut oil then refrigerating it reduces the amount of calories/carbohydrates absorbed by the body by half, taking the calorie content down to around 120. The process renders half the carbohydrates indigestible, allowing them to pass through the body without turning into glucose, which turns to fat if not burned off. Add a teaspoon of coconut oil to boiling water, add rice and cook. Refrigerate for 12 hours then reheat thoroughly.

Thanks @debrasue I'll give it a try and see what happens. I'm not worried about calories, it's the carbs I have to avoid.

The op has specifically stated the rice should be refrigerated, so no problem.
Then again, the number of left over curries and chineses' I've had for breakfast, I should have bean dead years ago if re heated rice was a problem.

Yes, the quick cooling, refrigeration and thorough reheating were stressed in the article but, like you, I've certainly taken some unintended liberties with those factors over the years! :)

I do think we stress way too much over food.
You go to some countries, without refrigeration, after beating the flies off the food, which has been left in a pot in the shade, reheated, and then eaten, while beating off yet more flies, you realise why we put £500 of good food in the bin each year.
