So today I got a hold of 10 Lbs of beef and it's becoming jerky and pemmican but what about flavour?

What are some decent dried things I can add to the pemmican for flavour?

Traditionally it's dried fruit like blueberries and cranberries etc but these are nearly 3/4 carbs. So... alternatives?
 
I find it very easy to get beef ... am I missing something here?
 
Where did u get the beef from? Partner loves making jerky!

A local butcher sorted me out. I like to do "caveman crafts" so I buy long bones from him too, £1 for a full cow shin bone. free marrow inside too; win-win.

The place most people get beef is from a local supermarket. It's nicely portioned and 20% fat and injected with water and salt for weight. seriously. read the contents of a pack of "bacon" this one was a whole 87% bacon with Water, Salt, Sugar, Stabiliser: Sodium Triphosphate; Antioxidant: Sodium Ascorbate; Preservatives: Potassium Nitrate, Sodium Nitrite for...taste? http://www.sainsburys.co.uk/shop/gb/groceries/bacon/sainsburys-cooking-bacon--basics-670g.

The problem is for jerky it has to be trimmed of as much fat as possible. Supermarket "butchers" don't have the time or skill to do this. Also, it needs to be "whole grain" beef so having it cut into bits is pointless. you need the long strings of muscle to stop it falling apart. Also, if you go to a supermarket you can't do what I do; barter and ask for bones and fat scraps too. My butcher sells me bones for a couple of quid and I can pick up fat for rendering for crafts and/or eating. It might cost a tiny fraction more, 5% - 10%, but you get what you pay for. It's the difference between a Bugatti Veron and a Lada in quality though
 
Oh I know all that I live in a tiny Welsh village with a butchers shop.
No water or ICI in my bacon.

But you're only using a few grams of dried bluberries, so overall it'll be low.

Having said that, I prefer spices, maybe dried chilli, smoked paprika, air dried onion, air dried garlic, and sun dried tomato as well.
