Hi RT,

The 1 Tbsp of flour roughly equates to 11g carb I think - probably higher than I can cope with but not disastrous as that's for the whole souffle and I guess you wont eat it all yourself (or in one sitting). The only way to know if it affects you is to eat it and then test at +2 hrs.

Hi It might be worth changing the flour to coconut flour and adding a 1/4 teaspoon of bicarb to help it rise. This would bring the carb content down nicely, I think to less than 3 g if my maths are correct.

Seems like a lot of effort for a an omelette with cheese? :lol:
what would the GL
Difficult to say since there is little correlation between total GI/GL and that of the individual components of a meal and I doubt that anyone bothered to measure it for this particular recipe.

However, the recipe only calls for 1 tbsp flour (6g carbs) in total - you should be able to eat all of it without exceeding even the strictest carbs quotas for a single meal.
[This site lists cheese soufflé as "very low GI"]

I'm lazy, rarely cook, but your efforts here have seriously encouraged me.
May go for the flour or coconut type and other tips.
