I don't normally add thickener in my soup because I only know white flour or corn starch which is not good for my blood sugar. Is there any low carb thickener that has little or no impact on the BG? Thanks
All depends how you're making it I find a touch of cream and a stick blender work fine you can blend as much or as little as you like , I hope that's of some help ??
Cauliflower! Thaw and cook some frozen cauli in the microwave, drain it and whizz it to a smooth thick puree with a stick blender - if you want smooth soup just chuck it in unwhizzed and whizz the whole soup - but for thick soup which you want to have chunky obviously whizz it first, then add. Works a treat. Doesn't even taste like cauliflower when it's part of something.

I buy sunflower seeds from amazon and grind them to flour in a small electric coffee grinder. 2.5kg of sunflower seeds costs about the same as 500g of almond flour, and works perfectly in baking etc.
