Spaghetti

last Saturday my carer made a red pepper bolognese topped off with cedar and mozzarella cheese, now I normally eat this with a green veg, but on this occasion after nearly 1 year of LCHF lifestyle I had it with Spaghetti, not a great amount but portioned size, taking my BG 1hr later suprised to only get 6.6.
Thinking this was a glitch I did the same again A Spaghetti Bolognese for tea yesterday-
BG levels before eating 6.1 and 1hr 6.6 and 2hr 7.2
For a high Carb food this surprised me somewhat but maybe it's one of them foods my insulin can handle.

On the face of it those post meal levels don't look horrendous, but did you carry on testing half hourly until you saw they were dropping? Just a thought.

No I've never tested until they come down, stuck to the rule of 5/6.5 before a meal, and under 8.5 two hrs after, so far it's worked for me, November 15 HbA1c 69! July 16'HbA1c 27, Diabetic nurse says if levels are good still, yearly visits for me
 
I'm not doing low carb myself. But I find pasta as a carb is probably one of my safest and I get good readings unless I eat too much of it. But I do bolus insulin for it of course. By safest I mean that I'm unlikely to get a hypo or go hyper eating it.... whereas some other carbs I do. Maybe you can handle small portions also.

From Italy, what the hell you've eaten? :)
Normally the real bolognese sauce is served with tagliatelle that is pasta made with eggs and normally is freshly made pasta.
Anyway if you want to try spaghetti, you could try Barilla brand (hoping that UK version is the same of the one they sell here) and try Neapolitan-style ragout, the main difference with the bolognese one is that the meat is left in bigger chunks and served aside the pasta.

when eating pasta I think that what one eats before and how actually the sauce is made could affect the spikes on BG.
 
Could it be the cheese that stops the pasta turning to blood glucose so quickly or am I in the wrong track here?
 
I tend to get good levels with pasta for the first couple of hours. Then the rise begins, and can last a few more hours.

So it would probably be worth you checking your bg every so often until you are sure it has returned to normal. :)
