Hy my BG was. 8.4 first thing this morning .for breakfast I had porridge and an apple and my took my meds(metformin) then 2 hours later I have spiked up to 12.4. Is the porridge, the apple or both

It could be both or either. Did you have milk with the porridge? That wouldn't help either. Most of us can't cope with cereals of any sort, although some can manage a small portion of porridge. Only your meter will tell you. You need to experiment.

I can have a packet of porridge (27g) made with milk and added a few almonds a few berries and a spoon of creme freche and my bs is fine, one morning I had no berries so added a quarter of chopped apple - BIG mistake!

You may need to drop the apple and reduce your portion size as @Bluetit1802 says the only way you will know is test different scenarios until you get the level you want to be.

For me a starting bs of 8.4 I would have avoided carbs all together maybe had scrambled eggs or bacon, but that's my choice
