Type 1 Split bolusing for protein

I’ve noticed that after eating an omelette with a slice of toast for breakfast , my blood sugar tends to peak after 4 hours at around 11mmol and above, should I split the dose and give an extended bolus at 90 mins to an hour, it doesn’t happen after my other other meals which could also possibly indicate that maybe I need to increase my dose for that meal, but I’m worried that I may end up hypoing, as three units of insulin may be too much for that meal, I’ve recently adjusted my carb ratio from 1:15 to 1:12 and the breakfast is less than 20 grams of carb, I’m quite confused, any input would be great.
 
If this is breakfast time is this maybe dawn phenomenon effect, not so much the amount of insulin or carbs you have dosed and eaten?
I had no idea this was happening to me till a couple of months after diagnosis I was given CGMs and as I walked into work one morning the CGM alarm went off, I thought for a low as I had not eaten much for breakfast.. was shocked to discover it was a high BS alarm… until the CGM I had had no idea these highs were happening.
Just another thought..are you calculating ALL the carbs in your breakfast? Spoonful of marmalade on the toast? Milky coffee or tea? Glass of fruit juice? Fruit yoghurt?
I spent 5 days in hospital on diagnosis and progressed to being allowed in the dining room for meals. One morning after the standard 2 slices of bread with cheese and ham and tiny bit of salad I decided to partake of a fruit flavoured yoghurt. It was out of a catering pack and had no nutrition info.. was horrified when my BS then went up to 21…..
I now use fruit yoghurt as a hypo fix
