My mother in law has diabetes and as we are all vege's I was wondering if anyone has any ideas we can use for helping with home made jam.

i don,t know about the sugar but pecitin is veggi safe and all shop bought jams i,ve seen are veggi oh and up the veggis its nice to hear of a few more of us

I would think that home made vege sugar free jam would have quite a market, maybe you should discuss this with your local food shop\megastore! Only kidding as said previously, use fake gelatin and fake sugar i dunno if it will look exactly like jam but i bet it willl taste scrummy. Both ingredients will be supplied by your local shop\megastore. let us know how you get on.
 
saint dalfour make beautiful jams - all without sugar and entirely vegetarian --- problem being they have 60 something percent carbs - from the natural fruit juices they use to sweeten the jams ... sorry I am no help whatsoever, but they are totally beautiful ... as I've been diabetic for like 6 days I can't really give any useful input ;) xxx
 
I think that if you making jam without 'real' sugar at home gives rise to a product that soon develops mould. High sugar levels act as a natural preservative. My other half tends to make 'jellies' (Crab Apples, Red Currant, Gooseberry etc). You can then use an artificial sweetner of choice. Also, if you cook the fruits and sweetner without removing skins/pips/seeds you can often get away without adding Pectin with the debris being left behind in the 'jeelybag' when straining.
 
there's a low sugar, jam setting mix from Dr. Oetker. available on-line Waitrose sell a delicious sugar free preserve and there are one or two others about
