I went to buy some almond flour last week and it was £11 for a bag and that bag was not very big, so I decided to stick to making my chocolate cake with almonds that I have crushed up myself in the blender.
Ground almonds £10/kg at Sainsbury's.

Apparently shops hike the price when they call it almond "flour", but it's the same thing. Ground almonds cost the same as whole almonds.

the way i make cauliflower mash...

boil cauli until it just starts to turn soft then bung it in a large collinder and put it over the sink, i then squish all the water out of it with a small cereal bowl, i am anal about getting it all out otherwise i find the finished mash too wet, then i put in a food processor add a little double cream and blend, you can do this with a potatoe masher but i dont have to do the washing up so i use the blender lol then bung it in a pan on lowish heat and add a big knob of butter, a big scoop of cream cheese and grate some cheddar and parmesan in, then i heat it and stir, it has the consistancy of cream mash potatoe but tastes far better, its yummy i have it a few times a week

you can blend it dry and put it in the freezer to save the boiling process next time or if the cauli is more than you need for one meal
That sounds like heaven! Will be trying that shortly! Many thanks and a big hugx

Many thanks to you all. I have ruled out almond flour as I read a report online about it. With kidney disease I was told to eat nuts sparingly. Almond flour has a massive amount of almonds in it....it's like having concentrated almonds. Too many nuts is not really a good thing, especially in my case.

I have tried this as a pasta substitute, my thoughts were it works better used in a stir fry than in a spaghetti bolognais. It's more like noodles.
Was ok and I use it quite often now.

There seem to have been several tests that show that apple cider vinegar causes carbs (all, including in bread and pasta) to have less impact on blood sugar. I first noticed the dramatic lowering of my bs after eating pickled vegetables, so I began taking vinegar tablets and I am having excellent results. It's bound not to work for everyone, but it is for me.

Hi I buy Dreamfields pasta which is imported from America can get it online Amazon etc is a bit pricy but worth the money just like normal pasta and doesn't raise by blood sugar which is great.

I read that article about dreamfields pasta before, If I eat it without my levels going sky high surely it is ok ?

Well, I tried the cauli mash tonight and really enjoyed it. I put a bit of butter and cream cheese in it. Sadly I have spent the last two hours paying for it as it's made my acid flare up. Must keep a food diary.

To an extent that is true, but

1. what the tests show is that its effect on blood sugar is the same as normal spaghetti, so you might as well save your money

2. As you are Type 2 (I think?), you might be able to cope with the blood sugar impact and bring it back down to normal, but it will be putting pressure on your pancreas and on your insulin resistance.

Have you measured your blood sugar at +1, 2, 3 hours after eating it? How high is "not sky high"?

Can I just ask a question, what kind of spike number would you not eat that food again, I mean for example, my fasting be was 5.9 mol this morning I had 30 g of porridge oats then tested at one hour my be was 10.3 then I retested at two hours and it was 8.0 should I not eat the porridge , or is this normal for a spike? I would be greatful for any advice

Hi Spiker I do not test very often I am type 2 and keep being told by Dr and Diabetic nurse not to test. I normally test 3/5 times a week which they say I should not do, all this is still new to me diagnosed a year ago. When I ate the pasta I was only advised at the beginning to test 2 hours after eating so do not know 1 hr or 3 hr etc but 2 hours was 7 ish which I thought was ok. Perhaps I should compare with normal pasta which I have not touched in a year? I like to have minimal carbs as I do not want to lose weight as I am a size 8/10 any thinner would look ill !!

7 after 2 hours is fine but yeah maybe compare it to normal pasta just to be sure you're not wasting money on the Dreamfields.

You can't test too often. How else can you know what food does to you?

I only get 50 strips a year and they don't think I should have them, the strips are costly I think that is why they say not to test I am happy to test but believe the cost should be funded. The cheapest I can get my strips for on ebay is £15-£20? Will compare normal past thanks
