Sudden BG spikes from protein

I'm Type I and eat low-carb (about 30g/day), high protein and fat. Being low-carb I have to plan bolusing for gluconeogenesis from protein. The literature says this is slower than carb digestion and releases its glucose slowly between 1-9 hours after eating (depending on where you read). However I'm getting sudden peaks of up to 5 mmol/L in 15 minutes whilst relaxing and long after eating. Has anyone had similar experience and how do you deal with this?
