Sugar spike

I was diagnosed about 3 months ago and have been on a low carb healthy fat diet since. I had totally cut out added sugar and all the white carbs and have felt amazingly well since and have also lost weight. However today while I was baking for an up coming fete, I unthinkingly tasted some of the sugar and lemon juice topping and within minutes, I was feeling sweaty and unwell. I tested my blood glucose and found it had spiked from 5.4 to 7.1. I am still feeling less than well despite eating eggs, spinach and mushrooms cooked in ghee for lunch, and even though my BS has dipped to 5.4.
Does this mean that I am unlikely to be able to eat any form of sugar again? Also if I get another reaction to sugar, what is the best way to reduce it?

I tried to work out which drink was non diet when mine got muddled with my daughter's - I got palpitations and felt unwell from just a couple of sips, so if you are as sensitive as me, I suspect that sugars will always produce an unpleasant reaction.
Probably a drink of water will sort it out - I have sugar so rarely I have never had the chance to experiment.

Yup, thats how I react when I don't eat sugar for long, then I suddenly eat it. I don't know why but my heart starts to race and it takes around 10-15 to calm down. I am sorry, but I don't have answer to the other question if you could have sugar again or not. Even I am trying to figure ot out.
 
@Rthmhlds it may improve - I had a Belgium Bun last week which is about 65 carbs and my readings were as follows:
11.30 - 5.4 just before eating
12.00 - 7.2
12.30 - 8.6
13.00 - 7.8
13.20 - 7.0
15.00 - 5.7
I may have been lucky but I have previously had similar results with a doughnut so I’m thinking my tolerance for carbs is improving.
