Sugarfree (low carb) lemon sorbet

Has anyone ever made sugarfree lemon sorbet? I want to make scroppino in a couple a weeks (wodka, Lemoncello, Prosecco and lemon sorbet all mixed together until fluffy), but the sugars in the sorbet make it really really really high in carbs (and I'll be having more than enough carbs on the specifick day). I've got a freezer and an ice cream maker. So bring on those recipes!

Yes, I made lemon sorbet before. It is quite easy if you have an ice cream make as you do. Just combine lemon juice and sweetener, nothing else.

I would probably use erythritol as this seems to be the perfect combination of taste and impact on blood sugars. Erythritol can sometimes be a bit harder to dissolve (than for example xylitol), so for my last desert, I put a bit of water and erythritol in a pot and heated it to help the erythritol to dissolve. I then added it to the other ingredients.

However, you may prefer another sweetener, such as stevia. Making lemon sorbet should then be easier still.

You may also find the Lemoncello is pretty heavy on the sugars, unless you make your own. Strictly speaking, the vodka should be around 80% if I recall correctly, to allow for the dilution when adding the additional water.

I looked into making some Lemoncello as gifts a while ago, but the strong alcohol to do it properly is very difficult to source in UK, and was around £50 a bottle if my memory serves me. All in all, I opted for something else in the end.
