Hiya. I've been diabetic for about 22 years and have recently decided to give the whole low carb thing a serious go. I've always been careful with regard to how many carbs I eat, but there is a definite room for improvement. I'm gettin married next year so have decided that now is the time to really try the low carb diet and, hopefully, lose a few pounds.
I am vegetarian, which makes things a little more difficult but certainly not impossible. I also have coeliacs disease, which means I cannot eat anything with gluten (oats, wheat, rye and barley) in it.
I'm only five days into the low carb plan and I am already getting bored. I'm having eggs or yoghurt for breakfast, salad or low carb soups for lunch, dinner is usually soup, omelette, pastry free quiche with veg, rice etc.
Anybody got any more exciting low carb, vegetarian, gluten free recipe ideas that I could try?
I'm still having fruit each day as I feel I need it - honestly feel lousy without it! Any suggestions would be welcome!
