Hi everyone

Ok, day five of seriously reduced carbs for me and I'm getting on ok but like I say day five and have everyday had bacon and egg for breakfast...For 2 of those days I had mushrooms too...All of which is yum but hey, I need variation....Any suggestions on carb free or very low carb breakfast?...I know you'll all come up trumps for me!

Here's a good one:

Lo-Carb Pancakes!

1egg
75g (approx.) Cream Cheese
Sweetener to taste. (or leave out for savoury)

Blend together the egg and the cream cheese with a Stick Blender, and fry for a couple of minutes each side in a little butter/oil in a shallow frying pan/crepe pan.

Add the fillings of your choice.

You'll be surprised!

(I made a thick one last night by adding ground almonds to the mix. It wasn't bad - bu tI think I'll add LESS ground almonds next time. Turned out a little dry).
 
I will def be trying that in the near future Patch, thanks for the recipe (all 2 ingredients) lol but simple is the way I think so thank you.

Tried those pancakes and got to say was pleasantly surprised, tasted nice and shall be having them again, thanks Patch!

My pleasure! Let me know what changes you make. I haven't really experimented with these - but I've got some ideas for some killer sweet and savoury versions:

Whipped Cream and melted 90%+ chocolate
Lemon juice and sweetener
Strawberries and cream

Cheese n' Marmite
Tuna mayo
Chicken mayo
Dairylea Triangles
Brie and walnuts
 
Had my first one today Clare, was a bit boring as didn't do any fillings...I used egg, cheese and a good old shake of sweetner...Was different but good...I shall be experimenting with dif fillings tho...Anything filling and low carb is good by me...Enjoy!!
