Surprise with rice
Today I measured the meals and they were as follows. But the surprise was with rice

After fasting my BS was 125

400 grams of cooked rice 125mg/dl. After 2 hours 185mg/dl

100 grams tomato 185mg/dl. After 2 hours 154mg/dl
160 grams Cucumbers 154mg/dl after 2 hours 98mg/dl

Wa aleiku-as-salaam.

Unfortunately my friend, rice is high in carbohydrates. And your national dish, couscous, is also high-carb. One serving of couscous has more carbs than I eat in an entire day.

I hope you can find some way to make low-carb Moroccan tagine without couscous or rice. Tough, I know!

After saying goodbye to rice, I learned to make "cauliflower rice." You can make this by hand although it is a lot of work. Or if you have a "food processor" ("robot" in French) you can make it in a machine.

It doesn't taste like rice, but it has a similar texture and goes well with the same kinds of meats and other foods. Not everyone likes the taste, but I do.

Couscous became popular in the West. We think of it as a good, healthy food. Unfortunately not good if you have T2 diabetes.

Also by the way, my childhood was in France and there are lots of Moroccan and Tunisian restaurants there! I love this food!

Perhaps you and I can figure out how to do Maghreb cooking in a low-carb way. Really hard, but fun.

There is a "food and nutrition" forum here where people share their recipes.

Edited to add: One good thing is that you eat a lot of lamb, in your country. This is a good food for diabetics because it is almost zero-carb and quite high-fat. Since I found out that I have diabetes, my wife and I have lamb at least once a week.

I do not like rice much, just eat it once a month
