what is the safest artificial sweetener?
 
The research I did after my T2 diagnosis suggested that erythritol and stevia - either individually or in combination are the best alternative sweeteners for me. I've now used them for over nine years and I've never had any issues with them raising my glucose levels. I prefer to use the term "alternative" as they occur naturally rather than being artificially produced. Be careful though if you opt to use stevia as it's often bulked out with other stuff due to its extreme sweetness.
 
Personally, I tend to use sucralose (various brand names) as that has a taste I can tolerate. Stevia doesn't taste at all sweet to me, just bitter and ugh! Erythritol is okay in food but tasted barely acceptable in hot drinks, e.g. coffee and tea. Saccharin is another that I find can taste okay in food but is barely acceptable taste-wise in hot drinks. Health-wise, probably better to do without :) but I have a sweet tooth and have never managed to adjust to the taste of hot drinks without (and I've tried, more than once, for more than 6 months at a time).
