I'm not vegan, but am vegetarian and have been for 10+ years. I don't think I could ever go vegan, just because I wouldn't be good about getting enough protein.
I do eat lots of salads, grilled veggies, nuts, dips (hummus & guacamole). Beans and lentils are a great way of adding protein, unfortunately my glucose levels are crazy after eating them, so I stay away (for now, at least). When I eat bread, it's always very high fiber. I think tofu is good if you like it, but I buy it prepared as every time I've made it myself in a sauce or food, it's been terrible.
I also take a number of supplements: omega 3, b12 and fiber. Omega 3 is available in a vegan version and so is b12. I may have to start taking iron, soon, I'm just waiting to see if I can bring levels back up without a supplement.
