I started this thread for discussion on the above topic.
After some data collected for my dad with diabete t2 over time from monitoring, i drawn some observations. His blood glucose tends to peak in around 75-90mins for his typical meal. Based on the hours target 8.5mmol recommended here, the peak could be around 9.5, since it dun stay there for long, hittng the target will ensure good hba1c if liver dump is not an issue.

Now you've found when he peaks please find the foods that caused the peak and remove them from his diet, if possible.
If your dad has a more flat line blood glucose his hba1c should come down as well.
