Unusually, I woke up hungry this morning and was seized by a sudden craving for doughy goodness. Obviously all the normal carby stuff is out, so I made keto “biscuits” (scones, to those of us in the UK) from this website:

These are delicious. I added some stevia/erythritol to make them semi-sweet. They do taste lightly of coconut from the flour (mostly almond with some coconut flour) but I don’t mind that in a sweetened scone. Unfortunately I think this would preclude me from making them savoury, I don’t much like coconut in savoury dishes. But the texture is very good - I opened a pack of salted butter especially and it melted into the warm, soft crumb in a totally satisfactory manner.
