That's a pretty good list! You like most meat which is goodFor me its sensory eg smell, texture but taste, I can tell at the slightest whether my body is going to rebel.
I eat Pork, Chicken Beef, Lamb. White Fish. 97% sausages. Eggs. Bacon. Cheddar Cheese only. Anchor Butter only.
Eat Broccoli, Cauliflower....like garden peas but they're carb heavy. Cant abide carrots. Swede okay. Broad beans no, runners yes.
Yogurt (breakfast) Strawberries, Raspberries. Occasional satsuma.
Not into cereals, nuts, seeds. Don't enjoy rice or pasta. Ate only boiled, mashed or chips when it comes to potatoes.
Like gravy but not other sauces. Mushrooms are okay. Tomatoes fried or in salads only.
That's about it...for the moment.

Google low carb cauliflower recipes and see if there's anything you could enjoy and your wife could help you make
So for your protein - any meat you like you can roast, you can fry or grill pork chops, lamb chops, chicken breast, making sure you season everything well with salt and pepper. If you don't mind your food mixed (my son doesn't like any of his food touching) you can make casseroles and stews with the meat and veg you like. Yes peas are carb heavy but a small portion tested with your meter may be fine. Same with a couple of golf ball sized New potatoes in their skins (if you can tolerate the texture) try them and test to see how your blood sugars do.
Grilled white fish with melted butter or baked in the oven is good. Sausage bacon, egg, grilled tomato make a great meal any time of day
Eating berries with full fat plain yoghurt is great any time too, just be careful on the portion size,
Do you like omelette? There's lots you can do with an omelette- cheddar cheese
Do you try new foods at all? My son sometimes will but only tiny tiny amount say half a teaspoon full along side other foods - sometimes once he's had it a few times he adds it to his list

The aftertaste is horrid, and it blew the taste of my weird little teas and chais... I used to put 5 spoons of sugar in my tea, coffee and espresso, so this is a shift in gears! Now I take my tea and coffee without sweeteners. (The others either tastes horrible too, or they killed my gut bacteria... Which was exceedingly unpleasant, so careful with that stuff!). I found it alright in my eggs with cinnamon, but discovered the other day I'm fine without it in it too... Getting used to a sugarless life, I guess. Because you're right, for something they're charging its weight in gold for, it should taste better!I just found it...weird.
