I was going to suggest Apple Health app - but not sure it is on the iPad. I use it on my iPhone to record all BG readings. Also I use My Fitness Pal app to record what I eat, this then appears in the Apple Health app ie how many carbs I've eaten that day.
So - my response might be helpful, if Apple Health works on the iPad ...
I'm not sure Apple health is on iPad at the mo (at least it didn't come with it installed, so unless it's in the App Store for iPad I don't know. I also use my phone and Apple health to track my bg's. There are several apps which could work, the best one I've found is sugar sense which reads the bg's from Apple health and then works out an estimated hba1c. The down side of sugar sense though is that you can only record the amount of carbs and not a full meal.
Even if not designed for the ipad you can download the app to it and use it. It may appear smaller on the screen but usually all functionality is present and works.
When you look in the App Store, just select iPhone apps if it doesn't appear. Et voila !
