I think that a version of eggs is a good idea - scrambled, for instance.
I am Danish, we have Rye Bread as an essential part of our diet. I am looking to move to the UK, so I have checked before, and it should be available at Tesco. It is a brown, dry ish bread with a strong flavour and yes, it is carbs. However, I have found it to be one of the only bread types I can eat half a slice of without having too much trouble with my blood glucose (10g carb per half slice or so). It is very filling compared to white breads, so with care, you may find it helpful. I have it in the morning, 1 half slice with a bit of ham or scrambled eggs.
I am one of the people who can eat anything at any time of the day, so sometimes, I can have a left over of a stir fry or something too - I like those cold in the morning, really.
Regarding the boredom of salads, I think that if you experiment a bit with other salad/lettuce versions, such a baby spinach leaves, super-finely chopped cabbages and never forget the dressing, you will find it less boring. I find that having meat in my salads definately helps.
If you add things like avocado, cucumber, celeriac bits, garlics... you can get quite different tastes and textures which makes it less boring.
I use oil/balsamico, oil/lemon, homemade 'thousand island' dressing and add a spice to them that fits the meat in the salad and that seems to work for me.
I must say that I am not low-carbing, but rather carb counting/limiting. My daily diet is probably anywhere between 50-75g carb with the occasional sinful day - I choose my carbs carefully, though as I need to lose weight and would rather take my insulin to match my dietary needs than inject insulin to bring down my blood sugar while eating stuff that makes it go up, so I put on weight. I have been on insulin myself only for about 2 months and have lost about a stone in that time.
Have you btw looked at what a brisk walk can do to help with those readings - even a 10 minute 'pulse up' stroll in your lunch break can keep your muscles more awake for the next hour or two if you're lucky...
