I have usually been having a fried egg on a slice of toast for breakfast because its filling, cheap and easy, but my last diabetes test came back higher so I realise I've really got to cut right down on carbs now, but breakfast is the meal I'm finding most challenging. (Dinner is usually steamed veg and protein). I'm on a tight budget - does anyone have ideas for a filling breakfast that's healthy and easy and won't break the bank (ideally under £1.50)?

I make a pancake out of whey protein powder and a egg and a bit of liquid, then some sauce with cream and dark choc, sweetener and sugar. Fills me up u too lunch. Not sure of the cost per meal though!

Bacon and eggs wouldn't be too expensive? Go for streaky bacon

Test to see if you can manage 1/2 a lidl high protein roll with lots of cheese toasted

Thanks trinity - i should have mentioned that i don't eat red meat and pork. But now you've mentioned that, I've realised I could always cook a bag of mushrooms in butter (costs £1) with an egg.

I don't know why I've been so creatively challenged over this - I guess I have just been reluctant to give up toast.

How about 2 eggs and/or some tinned fish? Sardine, kipper, mackerel... Cheap and filling. Plus any green veg you like (incl. mushrooms in butter - love those!)

Hi, I make banana pancakes, whisk up 2 eggs and mashed banana, pour batter into a little hot oil. They are yum. Also I make cream cheese pancakes 2 eggs and 2 tbsp of Philadelphia, whisk together, fry it. Add some homemade jam on top. Yum. All low carb.

I'm not a breakfast eater but every now and then I'll have one of the following

- Half a buttered Lidl Protein Roll cut in to soldiers with a soft boiled egg.
- Half a Lidl Protein Roll toasted with a fried egg on top.
- 2 egg omelette with cheese and/or salsa
- chia pudding - various flavours (reasonably cheap once you have bought the chia seeds)

Eggs. Nearly every day I have a 2 or 3 egg omelette. I vary the fillings, mushroom, tomato, bacon bits, cheese, boiled ham or all the lot. sometimes smoked salmon for a treat (a bit more expensive. That is totally filling and I don't normally need to eat again till evening. Use butter to fry your omelette, or olive oil or coconut oil or lard, no vegetable oil. That will be well within budget and set you up for the day.

Thanks AtkinsMo - I think this is looking to be my preferred option. I wasn't sure if eating so many eggs was ok, but it doesn't seem to do any harm to the people who do eat a lot.

This morning I ate some muesli and natural yoghurt (yes, I know, I shouldn't have had the muesli but I thought I would use it up) and had stomach pains and felt quite ill and dehydrated afterwards, so I've got to jump in and be disciplined and make the change.

Does the banana pancake not spike your BG levels ? Bananas send me into orbit !

I know it can be a bit of a challenge sometimes, but eat whatever you like to eat (bearing in mind your desire to low carb), even if it's not a usually recognised breakfast food.

If I'm going to be very busy, and have a longer than usual period between breakfast and lunch, I quite often have sardines or mackerel. I know canned fish isn't a usual breakfast option in UK, but it keeps me going ages and, provided I avoid a heavy tomato sauce option, it's extremely low (no) carb - and well under £1, if you buy in Lidl or Aldi.

My OH doesn't much enjoy it when I have the fish breakfast, as he is highly allergic to it, but I just sit well down the table if he's around at the time. Needs must.

Keep the toast! Just make sure it's a low-carb variety of bread loaf. Almond flour is the lowest carb variety I believe (compared to hazelnut flour, or coconut flour) - google almond flour bread and choose the one that looks easiest to make with ingredients you have on hand? A thick slice of that with masses of grilled cheese on top will keep you going for hours! And really nice if you are in cold weather and need heating up.

A blueberry almond flour muffin is a great breakfast treat too - swimming in masses of butter and whipped cream make it a real LCHF breakfast.

Thanks AndBreathe - I had some mackerel fillets yesterday and enjoyed them. Do you put veggies on the side when you have canned fish for breakfast?

(I just bought some sardines with lemon from Waitrose to try).

At breakfast, I just tend to have a few iceberg lettuce leaves or rocket leaves (whatever I have in the fridge that might provide a bit of bite/crunch), but have been known just to have it on its own, if I've got my shopping a bit out of synch.

I just find it a great, highly nourishing, standby.

Homemade bulletproof coffee! I add 30g coconut oil (a large pot is £3.99 from Home bargain and lasts a week or so) 20g butter (I use Kerrigold but have used Morrisons own @ about 89p for a block) your own choice of coffee and double cream (again Morrisons own about £1.60 for large pot) to a large mug. Add boiled water, whisk and enjoy! I tend to put the cream in last to give the oil and butter chance to melt. Really filling and practically no carbs. Ingredients last a while too so well under a £1 a go. I normally have one of these coffees along with scrambled eggs (3x large eggs mixed with butter) I've got a very good appetite but this does me for quite a while!
Ps I'm too tight to buy the real Bulletproof coffee!

Sound expensive, but if you do it right it really isn't - Smoked Salmon & scrambled eggs. Most supermarkets do "off cuts" at around £1.50 for a packet which does 2 breakfasts easily and a couple of eggs, or you could always go done the yoghurt/fruit route frozen berries aren't expensiveand big pot of plain greek yoghurt will last several days

Thanks lessci - smoked salmon & eggs sounds great. I've also started having wholemilk yoghurt with berries (I buy frozen as they're cheaper), but Greek yoghurt is delicious.

Thanks vxrich - I'm not a big coffee drinker - but I am sure that someone reading this may find it helpful to know how to make bulletproof coffee.
