Trying LCHF again - in need of economical breakfast ideas

you could cook more LC veg at night and have left over veg in a 2-3 egg frittata (fancy bubble and squeak), you can also do a larger cook and divide in to portions
 
For breakfast I have a four egg omelette spinach, mushrooms, in order to keep cost down I go to the local supermarket Sunday morning pick up enough eggs for the week, I can normally easily get 2 dozen or more for £2 as they mark them down, as the display dates finish on the Sunday, but use by date is a further week away.

A bag of frozen mushrooms and spinach are 3 for £2 from farm foods, I also get Boursin cheese when it on at 3 for £1 it's a massive £5 for a whole week and there is always mushrooms and spinach left over for other meals. Works out very cheap.

Thanks Stallen - I think you have a cheaper supermarket than me, but even so I think it will still work out fairly economical to buy those ingredients.

Just lately I've been using up some gluten free bread, so I've been having two fried eggs on one small slice of toast with something like parsley or a grilled tomato - the extra protein from 2 eggs fills me up more and seems to work better with the carb - but I'm going to try cutting the bread out when the loaf is finished.

Boursin cheese is lovely - not sure I would be able to restrain myself from eating it too quickly!

I'm really lucky to have a number of the cheaper supermarkets near me, that regularly have the options I need. The down side with me is that I'm vegetarian, I therefore tend to use Quorn for meals, but I try only to use the lower carb products, as I had a hospital appointment today, I switched from the usual omelette and went for 2 fried eggs, 2 Quorn hot dogs and a flat mushroom. I'm pretty lucky that I can tolerate eating from a limited selection.

Currently eating Konjac noodles with a sauce made up of crucials piri piri sauce, French mustard and GIA sun dried tomato paste. With around 40g of Quorn chicken pieces.

Having restraint is a tough one, I walk up the bread aisles and my other half always ask me to get her a treat, yesterday I got her chocolate eclair and chocolate coated cranberries, luckily I can enjoy the smells of carbs without being tempted whilst in the bread section.
